Help to understand "Safe Trading"

Hi all,

Fairly new to the server - had a couple of questions about trading to make money.

I see the "3 Safe Trade" limit - what does this actually mean? Player thieves cannot attack me? Is this restricted to a certain star level? Or can i do a 5* 3 times a day safely?

Is there a general guide around trading, i had a look and couldn't see one, so apologies if i missed it.
